It’s been the 400th time I’ve made this tart, because it’s THIS simple to make. Don’t be intimated by the crust. As long as you have a food processor, everything is done in a snap.
Ingredients (9-inch tart):
Short Crust Pastry Dough
1 1/4 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon granulated sugar
1 stick unsalted butter, cut into little cubes, chilled
1/4 cup iced water
2 cups strawberries or other mix of berries (fresh or frozen)
1/2 cup granulated sugar
1 teaspoon lemon zest
1 1/2 tablespoon all-purpose flour
To prepare the crust, place flour, salt and sugar in a food processor to mix. Add butter and process until the mixture resembles coarse meal. While the machine is running, pour in iced water slowly. The dough should hold together when pinched. Add a little more water if necessary.
Gather dough into a dish. Cover with plastic wrap and refrigerate for about 30 minutes to chill.
Remove the dough from the fridge. Roll it on a floured surface, until 3mm thick. Place the pastry onto the baking sheet lined with parchment paper. Keep it in refrigerator while preparing the filling.
Combine berries, lemon zest, sugar and flour in a large bowl. Remove the pastry from the refrigerator. Place the filling in the middle of the pastry, leaving about 1.5-inch border around the edges. Fold up and seal the pastry edges, leaving the centre open.
Preheat oven to 400F. Place baking sheet on the centre rack. Bake for 30 minutes or until the crust is golden brown and the juice is bubbling. Remove from oven and serve with vanilla ice cream or whipped cream.
Beautiful photo and gorgeous tart. I love making free-form tarts, there’s something much more inspiring about them, almost like making sweet pizza’s!
Keen to try the recipe. How many grams is a stick of butter? We can only buy them in large 250g blocks here (South Africa)
Thanks – Shez
On my list to make!
Made this for dessert tonight – amazing!! Surprisingly light, but oh so tasty!
Earlier this afternoon, I was just looking at a bunch of strawberries in my fridge, trying to figure out what on earth to make with them. This sounds perfect! What a great, summery dessert!
I am going to go make this tonight, I have some strawberries that are begging to be made into something wonderful. My husband will be very appreciative. Looking forward to more things.. Simple is always wonderful!

I love good tart any day, but kind of scared to tackle the crust. Looks like I will be making lots of tarts. Thanks for the recipe.
I’ve been wanting to make a berry tart…all I want is berries lately since they’re so fresh and delicious right now! I might just make this this weekend! Congrats on the top 9!
I don’t think I’ve ever made a pastry crust or a tart but those strawberries look soooo amazing that I might have to get started on this recipe right away!
This is beautiful! Congrats on making Top 9!
Is it only mine or when your pie is in the oven the butter melts and oozes everywhere kind of soaking the crust…it happens everytime with my pies, i wonder if it’s normal or it’s because i live at the most hot and humid place in the universe…
This is an easy crust! Yes! I do have fresh fruits to use up. I can’t wait to try this!!!
Gorgeous tart! I have a fridge 1/2 full of strawberries I need to use…what a great, simple use for them!
mmm…lovely tart, love that it’s rustic looking!
Crusts do intimidate me, but you make it look so do-able!
