Happy Monday! Again, if you have a hard time being happy, look at this pie, the sinfully smooth cream filling and the vibrant red strawberries.
I made this same pie for a few times already. All because it’s real simple, but tasty and beautiful. Such a crowd-pleaser that takes less than an hour to finish.
Ingredients (9-inch pie):
Crust
1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
Filling
1 cup whipping cream
8 ounces cream cheese, softened
2/3 cup sugar
1/2 teaspoon vanilla extract
10 fresh strawberries, halved
Glaze
1/2 cup chopped strawberries
1/4 cup sugar
1/2 cup water
2 teaspoons cornstarch
Directions:
Preheat oven to 350F. Grease a 9-inch pie dish.
To prepare crust, mix graham cracker crumbs and melted butter in a small bowl, and mix until a moist yet crumbly mixture forms.
Firmly press the mixture into the bottom and sides of the pie dish.
Bake for 10 minutes. Let cool completely on a wire rack.
To prepare filling, in the bowl of a standing mixer fitted with the whisk attachment, beat the cream until it holds firm peaks. Remove cream from bowl and keep cold in fridge.
In the same bowl, use a paddle attachment, beat cream cheese until it’s soft and creamy.
Add sugar and vanilla, continue beating until combined.
Gently fold 1/3 of the whipped cream into the cream cheese mixture to lighten the mixture, then add the remaining cream and continue folding until incorporated.
Pour the cream mixture in the cooled crust. Smooth the top with a spatula. Arrange strawberries on top of the pie.
To prepare the glaze, cook over medium heat the strawberries, sugar and water for 2 minutes. Add cornstarch, stir until thick and clear, about 8 minutes. Strain through a sieve, let cool slightly before pouring over halved strawberries.
Refrigerate the pie until set, about 3 hours, or preferably overnight.

I am ready to make this recipe as it looks so good. I plan to have it as my family’s desert one evening. I did print it out without any problem. I will keep this recipe for many of my deserts at the end of a meal and maybe just to have on hand for guest with coffee. Thank you so much,

Mmm that cream filling sounds amazing. I love the strawberries and I’m definitely a crust kinda gal, sometimes I have problems with the filling but this mixture of whipping cream and cream cheese is right up my alley! Looks beautiful!
