Apples are always in season. But this is fall. And this is the time when you should bake with apples. Just to fill your house with the incredibly delicious aromas.
Plus who can resist the golden crispy crumble topping? I can’t! I seriously can’t.
Ingredients (8-inch cake):
Apple Filling
5 Granny Smith apples, peeled, cored and cubed
2 tablespoon unsalted butter
1/4 cup brown sugar
2 tablespoon maple syrup
1 teaspoon ground cinnamon
Crumble Cake
1 1/4 cups granulated sugar
2 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 sticks unsalted butter, cold and cut into cubes
1 egg
1 tablespoon milk
1 teaspoon vanilla extract
Directions:
To prepare apple filling, put all ingredients in a skillet. Cook over medium heat for about 10 minutes, stirring occasionally, until the apples are soft. Remove from heat and allow to cool to room temperature.
Preheat oven to 350F. Grease an 8-inch cake pan and line the bottom with parchment paper.
Mix sugar, flour, baking powder and salt in a food processor.
Add butter and process until the mixture resembles coarse meal.
Spoon out half of the mixture. Set aside.
In a measuring cup, mix egg, milk and vanilla. Pour into the remaining half of the flour mixture. Stir to combine and pat it into the prepared pan.
Top with the apple filling. Crumble remaining dough over the apple layer.
Bake in preheated oven for 45 to 50 minutes, or until top is slightly brown. Cool completely before serve.
