Blueberry Crumble Bars

This blueberry crumble bar recipe is one hell of a keeper, I am telling you, my friends! Perfect breakfast, snack, dessert, treat. Kids love it! And I can’t have enough of the crumbles!

I could imagine replacing blueberries with other berries like cranberries or cherries. And try orange instead of lemon when you are planning to go with cranberries. I know they are quite friendly together!

Ingredients (about 25 square bars):
1 1/2 cups white sugar
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
zest and juice of one lemon
2 sticks cold unsalted butter, cut into small cubes
1 egg, lightly beaten
4 teaspoons cornstarch
3 cups fresh blueberries

Directions:
Preheat oven to 375F. Grease a 9×13 inch pan.
Mix 1 cup sugar, flour, baking powder, salt and lemon zest in a food processor.
Add butter and egg, process until the mixture resembles coarse meal.
Pat half of the mixture into the prepared pan.
In another bowl, stir together the remaining 1/2 cup sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust.
Crumble remaining dough over the berry layer.
Bake in preheated oven for 45 to 50 minutes, or until top is slightly brown. Cool completely before cutting into squares.

  1. Could I use cherries instead of blueberries? Just happened to have a lot of frozen cherries in the freezer. :)
