Apple Spice Cupcakes with Dulce De Leche Cream Cheese Frosting

When fall is around the corner, apple desserts are naturally taking over the kitchen. These moist and flavourful apple spice cupcakes are subtly spiced and full of fresh apples inside. They are topped with a dulce de leche cream cheese frosting and garnished with apple chips.

Ingredients (12 regular-sized cupcakes):
Apple Cake
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 cup sour cream, room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, softened
1 cup light brown sugar
2 large eggs, room temperature
1 cup diced and peeled apples
Dulce de Leche Cream Cheese Frosting
2 packs 8-ounce cream cheese, softened
2 sticks unsalted butter, softened
3/4 cup dulce de leche
1/2 cup powdered sugar

Directions:
Preheat oven to 350F. Grease a muffin tin or line with muffin liners.
In a large bowl, sift together the flour, baking powder, baking soda, salt, ground cinnamon, and ginger.
In another bowl, whisk together the sour cream and vanilla.
Beat butter and sugar together on medium speed in a bowl of a standing mixer until light and fluffy. Beat in eggs, one at a time, until blended.
Reduce the speed to low and beat in half of the flour mixture, followed by the sour cream mixture. Beat in the remaining flour mixture until just incorporated.
Fold in the diced apples.
Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake for 15 to 18 minutes or until wooden pick inserted in cake comes out clean. Transfer muffin tin to a wire rack, and let cool completely.
To prepare cream cheese frosting, place cream cheese, butter, and 1/2 cup dulce de leche in a mixing bowl. Beat until soft and well incorporated. Add powder sugar and continue beating until light and fluffy.
Frost the cupcakes with the cream cheese frosting. Drizzle with the remaining dulce de leche. Garnish with the apple chips.
