I am not going to lie. This recipe is pretty much a recycled one. I adapted my go-to shortbread recipe by adding some espresso and pecans in the cookie dough. And we got some buttery, nutty and coffee-infused cookies, which are already insanely good.
I think I felt really dreamy about the baked alaska cutting video I saw on Instagram, and decided to make my own baked alaska.
So we are back! From our long road trip all the way to California! Portland, Oregon Coast, San Francisco, Los Angeles and San Diego. Disneyland, Legoland, SeaWorld and San Diego Zoo. All the playing, driving, walking, lining up, sweating, yelling, nagging, whining… and we came back with a huge load of cherished memories. I knew that I had to go buy mascarpone right away and made this blueberry lemon icebox cake after I came across the recipe from Bon Appetit. But then I got busy and I got a very forgetful mind. And I just forgot to buy it every time I went to a grocery store.
I love coconut! If you do too, you should totally make these coconut ice cream sandwiches. Coconut ice cream is nestled in-between coconut shortbread cookies, then rolled with more shredded coconut! Oh my! Such a coconut addict’s dream!
